Wheat
I am a type 2 diabetic. There are moments that it feels like everyone is or is affected by the disease. Right now I am reading three books, all that relates to health and well being. The first is Wheat Belly by William Davis, MD. My Cardiologist suggested this one. He didn’t tell me to take a new pill, but to look at potentially what wheat has done to our lives, in particular, mine. The author has a lot of issues with agribusiness and hybridizing and considering that I grew up on a stock and grain farm, wheat a significant part of our bread and butter.
So have been looking for the last two months and I am not happy. I use a CGM to test my glucose very frequently. One could say I was obsessive. I try to keep my blood glucose levels between 90-140, expecting that it might rise to 200 or more when I eat. But lately, I hope that the glucose readings will fall within 2 or 3 hours to my normal range.
Most diet books push eating whole grains, so I tried a farro salad. In case you didn’t know – wheat. I ate a portion of the salad, and at the end of the meal, my sensor indicated my glucose levels were rising and rose to a degree more than 300 and what scared me was that it stayed at that level for nearly 6 hours. The meal didn’t have lots of free sugars. I would have liked a potato, but no and even the dressing was just vinegar, avocado oil, and cardamon. And if Bib lettuce has that much sugar, I think I am going to starve. Since I knew I was going to watch the levels, no dessert.
One thing that I have found is that some gluten-free bread is okay and some non-wheat bread is good and seems not to affect me, so I am not sure it is wheat, flour or something else. Dr. Davis looks toward wheat, but I need to do some personal testing. I will work through all three volumes and look at how realistic the results are for me.
